Finger Lickin’ Barbeque Chicken – Without The Grill

Finger Lickin’ Barbeque Chicken – Without The Grill

QuickTip: I usually place two leg quarters together, and crimp the edges of the foil together around them. Once you have covered all of the leg quarters, place them on cookie sheets, and bake them in a 350 degree oven for about an hour and a half.

We all love barbeque chicken. That tasty treat that leaves sticky fingers all around, has been a summertime favourite for years. But did you know that it is possible to enjoy this family favourite all year long, without a grill? A simple, old fashioned recipe for tried and true, kitchen prepared, barbeque chicken has been in my family for years. Below you will find step by step instructions that will have your family agreeing that your barbeque chicken is the best!

Tip: Brush the tops liberally with your choice of barbeque sauce.

To make this world famous barbeque chicken, first you need about ten pounds of chicken leg quarters. Be sure that you rinse them well, removing any remaining feather squibs (the bottom stalk of the feathers), but leave the skin on. You are going to want a large tub that you can fit all of the leg quarters in once they have been rinsed.
The second step to this amazing barbeque chicken is the marinade. You first need to completely cover the rinsed leg quarters with water. Over top of this, you need to pour one cup sea salt, one quarter cup onion powder, and one quarter cup garlic powder. Let the chicken sit in this mixture for at least three hours. Overnight is best.
Step three in this fabulous barbeque chicken recipe is the actual cooking of the chicken. The best way to do this, to ensure that your chicken stays moist and juicy, is to wrap the leg quarters in sheets of foil. I usually place two leg quarters together, and crimp the edges of the foil together around them. Once you have covered all of the leg quarters, place them on cookie sheets, and bake them in a 350 degree oven for about an hour and a half.
The final step to making this delicious barbeque chicken is the actual barbequing of the chicken. This step is completed under your oven’s broiler. Remove the leg quarters from the foil, and lay them side by side on a broiler pan. Brush the tops liberally with your choice of barbeque sauce. Be sure that you turn your broiler on high, and do not walk away, as this step only takes a minute.
Place the barbeque chicken under the broiler, leaving it in only long enough for the skin to crisp. If you leave the chicken under the broiler for too long it will burn, so watch it carefully. I can guarantee that, if prepared properly, this oven-cooked, barbeque chicken will quickly become a family favourite.

Hint: Be sure that you rinse them well, removing any remaining feather squibs (the bottom stalk of the feathers), but leave the skin on.
